We start by rinsing the thighs;

We put them in a pot, we put enough water to cover the meat and we boil it;

Let it boil until the meat is lightly removed from the bone;

When they have boiled, take out the thighs and leave them to cool;

We take the meat off the bone and break it into small pieces;

In the water in which the legs were boiled, add garlic, vegetables, salt, pepper and pour over the meat;

Mix the gelatin with water and let it sit for about 8-10 minutes;

Put the gelatine mixed with water over low heat, leave for about 5 minutes and pour over the meat; Refrigerate until it has hardened!

Ingredient:

  • one and a half kilogram legs or pig's head,
  • an onion,
  • 2 carrots,
  • a bunch of parsley,
  • a parsnip,
  • a celery,
  • two bay leaves,
  • 3-4 juniper berries,
  • 3-4 cloves of garlic (optional),
  • salt.

Method of preparation:

Wash and shave the pig's feet or head well with a knife. If they have hair, they burn in the flame on the stove. The legs are cut in half lengthwise and the head is broken with the butcher. Place in a large pot and cover with water so that the water level is 3-4 fingers above the meat. Put on the right heat and simmer.

Always froth, then add salt, cleaned and washed vegetables, bay leaves and allspice. Cover the bowl with a lid, leaving only a slightly exposed pan edge. Leave it on the fire until the meat comes off the bones easily.

Remove the bones and place the meat on the bottom of several plates. Grind the garlic, then add a little salt and mix with the juice obtained from the meat when it has boiled. Strain and pour the strained juice into plates over the meat, making sure it is well covered.

The dishes with juice and meat are cooled to coagulate.


Chicken wing meatballs

The chicken wings are boiled in the water in which the whole vegetables and spices were placed.

then simmer for about 30-40 minutes.

Remove the wings from the juice, allow to cool and clean the bones.

Grind the garlic and add it to the juice in which the wings were boiled.

The gelatine is soaked according to the instructions on the package and added to the juice.

For the preparation you need the following ingredients:1 chicken breast / turkey 1 onion 1 bell pepper 1 carrot 1 parsley root 1 celery 2-3 bay leaves 1 tablespoon peppercorns 1 tablespoon salt 1 tablespoon vegetable concentrate 3 garlic cloves 2 sachets of gelatin 1 l of water.

Preparation of chicken meat: Boil the chicken / turkey breast in a liter of water. Peel the vegetables and add them to the boil, together with the chicken breast. Add the peppercorns, bay leaves, vegetable concentrate and salt, and simmer until the water drops to half the initial level. Peel the garlic and crush it, then add it to the pot, let it boil for another five minutes and turn off the heat.

Gelatin preparation:Put gelatin in a bowl of cold water (100 ml of water for each sachet of gelatin) and mix gently. Let it soak for 10 minutes. Then put the gelatine in a bowl and heat on a water bath (Bain-Marie is a term that refers to a French cooking technique and consists of placing a pot & # 8211 pot, pan, bowl, etc. & # 8211 with food in a larger one, which contains hot water, which surrounds the food with its heat). Stir constantly until the gelatin dissolves, but be very careful not to boil the gelatin. The gelatin is dissolved when it clears.

After you have prepared the gelatin, put it aside and drain in a bowl the soup in which the vegetables and meat were boiled. Cut the meat into strips. Cut the carrot into slices. Add the meat and carrot in a large bowl (or more, smaller), pour the gelatin over the soup and mix well. Then pour the soup, through a tea strainer, over the meat in the bowl (s) and let it cool to room temperature.
After it has cooled, garnish with parsley leaves and put the meatballs in the fridge until the next day. Serve cold, with homemade bread and mustard or horseradish.

Chicken colds Chicken meatballs-Kocsonya





As the weather suddenly cooled down and I had a few chicken claws in the freezer, I started to prepare colds, as we were very hungry. We didn't get a large amount, just enough to quench our appetite.

Ingredient:

12 pieces of chicken claws
1 piece of bone from the chicken breast and skin (I used the meat for the slices :)))
2 heads of garlic
1 tablespoon pepper
salt to taste
Mexican vegetable mixture
3 chicken livers

The well-cleaned and washed chicken claws are boiled in 3 liters of cold water. Add 1 tablespoon of salt and simmer over low heat together with the 2 heads of garlic cleaned first of the foil and 1 tablespoon of pepper. Leave it to boil until the liquid decreases to half of the initial amount. If necessary, add salt to taste (but not too much because you risk not cooling the cold). Separately I boiled some vegetables from the Mexican mixture. Separately I boiled 3 chicken livers. I took the chicken claws out of the cold and strained the liquid.
In plastic bowls I put a few tablespoons of boiled vegetables and a piece of liver and over them I put a little juice. I let the bowls cool to cool the cooling and then I placed a few chicken claws on top and filled with the remaining liquid. I cooled the bowls again until the cooling coagulated.
I poured the contents of the bowl on a plate and served with lemon juice.
