  • 300 dandelion flowers
  • 750 g of sugar
  • 1 l apa
  • 1 lemon

Servings: 2

Preparation time: over 120 minutes

RECIPE PREPARATION Honey from dandelion flowers:

Gently wash the dandelion flowers in cold water. We put water to boil and when it boils we also put the flowers. Let it boil for 2-3 minutes, turn off the heat and let it penetrate overnight. The next day, we strain the syrup and throw the dandelions. Bring the syrup to a boil and after boiling add 750 g of sugar. Let it boil until it thickens, about 1 hour and a half. At the very end, add the finely chopped lemon peel and the lemon juice. (I put a few slices of lemon) If it is not boiled enough, the honey will spoil, so it will be better boiled. Although if it is too boiled, it will become sugary, but if we put it in hot water, or for 1-2 minutes, the microwave oven will recover. Pour into sterilized jars, let cool and store in the refrigerator.

If you want to get an even more dandelion syrup, add dandelion leaves along with dandelion flowers. Wash nettle leaves well in several waters and dry with a kitchen towel. Finely chop, mix with washed and dried dandelion petals and weigh. To 500 g of dandelion (dandelion + nettle) add 500 g of honey plus juice of 2-3 lemons. Leave to soak for 14-18 days.

Mix 2-3 times a day with a wooden spoon. After maceration, filter and store the syrup in small bottles in the refrigerator.

Collecting and preparing flowers

The simple characteristics of collecting flowers for future delicacies and their preparation for making honey will help to prepare it very well.

  1. It is necessary to collect the dandelion during the period of maximum flowering. It is best to do this at noon, when the flowers are most open. At this time, the flowers contain the largest amount of nectar
  2. Of course, it is better to collect those flowers that do not grow on the edges of highways and in other highly polluted places, but on lawns, on the banks of rivers and lakes, located far from roads.
  3. It is recommended to collect flowers if there has been no rain for at least one day. In this case, more nectar will gather on the flowers
  4. To break, and it is better to cut only fully open flowers
  5. The flowers are applied directly and all sepals are removed
  6. After harvesting, rinse the flowers well under running water. Some housewives do not recommend washing the plants carefully to avoid losing part of the nectar by them. They are right in their own way. However, you need to be sure of their purity, the lack of small insects and the lack of environmental pollution.

Dandelion Honey & # 8211 natural dandelion syrup recipe!

Dandelion syrup or as it is called & # 8220dandy honey & # 8221 (because it does not give way to bee honey in color and consistency), the more attractive it looks, the tastier it is. Plus, it has benefits for the human body!

INGREDIENT:

-500 yellow dandelion flowers

METHOD OF PREPARATION:

Tip: Dandelion flowers should be picked off the road in a dust-free place.

1. Dandelion flowers are harvested fresh and only those that are open. Those that already make seeds or white down are not good for syrup.

2. Remove the green part at the base of the flower and place them in a large bowl.

3. Pour the water into a large, double-bottomed saucepan. Add the dandelion flowers to the water. At first it seems to take up a lot of space but it is not. During cooking they will decrease in volume.

4. Cover the pan with a lid and allow to reduce in volume. Stir on low heat for 10 minutes after it starts to boil.

5. After 10 minutes of boiling, remove from the heat and leave to cool for 2-3 hours. During this time the dandelion flowers will release their aroma and taste.

6. After they have cooled, pass the flowers through a strainer (we only need juice). The flowers are squeezed well by pressing them with a spoon.

7. Strain the yellowish liquid once more through a strainer and pour into the saucepan.

8. Bring the juice to the boil and add the whole amount of sugar over it. Stir and simmer for 20 minutes under the lid, stirring occasionally.

9. If you notice that large bubbles form during boiling, then reduce the heat. After 20 minutes of boiling, add the juice from a lemon and cook for another 15 minutes & # 8211 this time without a lid, this way the water will evaporate and the syrup will thicken.

Important: Lemon juice prevents the crystallization of the syrup and gives a sour taste and a specific aroma.

10. Remove from the heat and allow to cool completely. Divide the amount of syrup into sterile jars and store them in the refrigerator.

Out of the total amount of flowers and water came 2 jars of 0.5 liters each.

Dandelion syrup comes out the color of amber, dense and fragrant. In the cold winter evenings you will enjoy dandelion honey and you will feel that summer is at home, next to you!
