Justin Burdett, chef-owner of Local Provisions in the heart of downtown Asheville, N.C., grills whole kale for a hearty, winter vegetable option. To grill the kale, Burdett blanches and shocks whole kale — stems and all. He then coats the kale lightly with olive oil, salt, and pepper before charring it on the grill. Once charred, he removes the kale from the grill and finishes it with lemon juice. The result is hearty kale stalks with a slight char flavor, which is brightened by the acidity from the lemon juice. Successful grilling is about preparation and good ingredients. From a luxurious splurge on an aged porterhouse to economical chicken thighs just right for an everyday meal, there is a delicious option for every budget and appetite. Grilling a whole fish is simple if you have a basket (which makes for easy flipping). Even better, a dramatic side of salmon needs no turning at all. From American classics like cheeseburgers and smoky baby back ribs to iconic jerk chicken, the flavors often enjoyed at restaurants are easy to achieve at home (and can be made even better, since you control the quality of the ingredients).

With grilling, marinades are big. Planning a day or two ahead makes a huge difference in the flavor-penetration of any marinade, such as the yogurt-based one used for the chicken and lamb skewers you see here, and delivers the best results during quick cooking times. For simply-seasoned steaks, remember to salt in advance to draw the juices out. That's how you achieve a perfect crust.

Grilling is also vegetable-friendly, and it's an easy way to celebrate seasonal produce. What tastes better than grilled corn, its husks pulled back and dressed with your own chile-lime salt? Is there anything quite as appetizing as grilled vegetables tossed while hot in an oregano-strong dressing? And let's not forget about those more unexpected foods that are well-suited to cooking on the grill. If you ask us, grilled pizza and garlic bread are summertime staples, too.

Recipe: The Perfect Grilled Quail

I’m often asked about the perks of owning a gun dog. The answers are legion, but one of the best is that I hunt more, which means more wild-bird dinners. During the season, and long after, our menu ranges from dove to ducks, and most recently quail.

As I’ve said before, I’m no chef, but my wonderful wife is a maestro in the kitchen. So I turned these birds over to her. Jenny found a recipe in a new cookbook by Chris and Idie Hastings of the Hot and Hot Fish Club in Birmingham, Alabama. Chris, whom I’ve met briefly, is a bird hunter and a dog guy—the good chef prefers setters. He’s also one hell of a cook. For our meal, Jenny handled the prep and the sides (in this case, roasted winter veggies and couscous) and I manned the grill. Here’s how we did up the birds:

6 6-ounce semi-boneless whole quail*

1 small garlic clove, smashed and peeled

1 1/2 teaspoons fresh thyme, chopped

1 1/2 teaspoons fresh sage, chopped

1 1/2 teaspoons fresh parsley, chopped

Clip and discard the last two segments of both wing tips on the quail. Rinse the quail under cold running water and pat dry. Place the quail in a large glass bowl with the olive oil, garlic, thyme, sage, and parsley. Toss to coat. Cover and refrigerate for at least two hour or up to overnight.

Preheat the grill to medium-high heat (350-400 degrees) Remove quail from the refrigerator and marinate at room temperature for 20 minutes.

Remove the quail from the marinade and season both sides with salt and pepper. Place quail on the grill and cook for 5 to 6 minutes on each side or until golden brown and cook through (like most small birds, you do NOT want to overcook). Remove the quail from the grill and set aside to keep warm until ready to serve.

* We cooked our birds bone-in, which Hastings says makes the meat even more flavorful. Add a minute or two to cook time. As you may have surmised, the dinner was excellent. In fact, I’ll take quail over any game bird.

As always, I’m curious how you cook your quail. Let’s hear the best you have.

Grilled BBQ Chicken Thighs

We love this recipe for grilled BBQ chicken thighs that uses the juiciest, most-flavorful part of the bird. First, the chicken is marinated in an olive oil-vinegar-spice mixture. Then, it's popped on the grill. In the final stages of cooking, it's slathered with a super-easy, homemade sweet and spicy barbecue sauce. You won't believe how effortless it is to get so much taste out of chicken.

Tips & Tricks For The Perfect Barbecue Dish

First things first, preheat the barbecue before you start cooking. While the grill is hot, clean it and then oil the bars of the grate when it is time for cooking. This will ensure that your meat doesn't stick to the grill and you'll get those grilling impressions. Also, have a sharp blade at all times for dicing and slicing. A spray bottle with water near the grill is a must, in case of flare-ups.

While cooking meat, avoid piercing it with a fork or prongs as the juices will escape, making the meat drier and less flavorful. Instead, use a spatula or tongs to move and flip your food. The same goes for leaner proteins like fish. If you are using chicken with the skin, rub the outside with a little butter or oil and then lightly season it. It'll give the chicken a nice and crispy texture.

Barbecues are not just about meats, there are plenty of options for vegetarians too. Potatoes, cherrytomatoes, bell peppers, sweet potatoes are great on the grill. Before they hit the BBQ, toss them with a light coating of oil, sprinkle some seasoned salt and wrap in aluminum foil. When using onions and eggplant, you should cut them into thin circles for a crispier outside.

An important thing that you must pay attention to is the marinade. Do not rely solely on the BBQ sauce, experiment with different types of marinade, seasonings and rubs to make your grills stand out like teriyaki sauce or garlic and herb marinade. Add a little wine or beer to your standby sauce. No matter what type of marinade you choose, try to get the meat in the mixture at least 24 hours ahead of time.
