Wash the rice, boil it in water with a little salt. When it has penetrated, turn it over in a sieve and let it drain well. Finely chop the peeled onion, mash the peeled garlic. Ingredients
- 1 cup dried rice (white or brown) or quinoa
- 2 tablespoons olive oil or & frac14 cup water
- & frac12 large onion, diced
- 1 green bell pepper, cored and diced
- 1 can (14oz) fired roasted diced tomatoes, drained
- 1 can (4oz) diced green chilies, drained or 1 large jalapeno, seeds removed and diced
- 1 tablespoon cumin
- 1 teaspoon chili powder
- 1 teaspoon chipotle powder, optional
- 1 teaspoon garlic powder
- & frac12 teaspoon leap, or to taste
- 1 can (9oz) horn (about 1 cup), drained
- 1 can (14oz) black beans (about 1 & frac12 cups), drained and rinsed
- & frac14 - & frac12 cup cilantro, loosely packed
- 6 large flour tortillas (or your favorite GF tortillas)
- 2 cups shredded lettuce
- guacamole or sliced avocado, optional
Instructions
Grain: Cook your grain according to package directions and set aside.
Black Bean + Corn Sofrito: In a large pan or pot, heat oil / water over medium heat, add onion and bell pepper, saute for 5 minutes. Add the tomatoes, green chilies or jalapeno, cumin, chili powder, garlic powder and salt, mix well and continue to cook another 4 - 5 minutes, stirring often. Add the black beans and corn, cook a few minutes until warmed through. Stir in the cilantro. Taste for seasoning.
Layer + Roll: Place tortillas on a flat surface, down the center, leaving a few inches at each end, layer with & frac12 cup of black bean mix, then shredded lettuce, guacamole, and finish with & frac12 cup of rice. Fold each of the end pieces up towards the center, holding the flaps down, roll the edge closest to you up and over, and continue to roll the burrito away from you to completely close it.
Serve with condiments of choice.
Store: Leftovers can be stored in a covered container, wrapped in foil or baggies and kept in the refrigerator for up to 6 days. For longer storage, they freeze well for up to 2 - 3 months (store without lettuce or avocado for best results).

That & # 8217s quite the wake up call.
A traveler at a Texas airport got caught trying to smuggle crystal meth into a breakfast burrito, authorities said.
TSA agents at the William P. Hobby Airport in Houston noticed the bulging burrito during a routine X-ray of the passenger & # 8217s carry-on luggage on April 2, the agency said Friday.
After spotting & # 8220an unidentified lump & # 8221 in the burrito, agents asked the person to unwrap it for a closer inspection.
But & # 8220the passenger insisted it was just a breakfast burrito, & # 8221 TSA said in a statement.
Agents again requested the burrito to be unwrapped and, when the traveler finally complied, they noticed “something dark and unusual” amid the eggs, cheese and meat.
After scanning the burrito a second time, the TSA officers saw & # 8220black tape and dark wrapping around a large organic mass. & # 8221

Suspecting it was some kind of illegal substance, the agents called Houston Police, who confirmed the mass was actually meth, the TSA said.
Cops confiscated the contraband and arrested the traveler, who was not publicly identified in the statement.
According to local news outlet Houston Press, it appears the burrito might have actually been a taco, from Pappas Bar-B-Q, which has an outpost inside the airport & # 8217s main terminal.

- Flour tortillas - I find the large burrito shells work best to hold the filling. However, use whatever size you have available.

I’m an avid watcher of Miley Cyrus ’Instagram stories, and when I saw her post about the creation of a Miley-inspired burrito, I was intrigued.
Her story showed a TikTok comment thread between Chipotle and the "Midnight Sky" singer, the latest iteration of the "If Miley Comments" trend where TikTokers write that if Miley tells them to do something, they'll do it.
In the comment thread, Miley agreed to collaborate with the chain only if her meal was called the "guac is extra but so is Miley" burrito. Chipotle heeded her call and asked for her go-to order in their direct messages.
Thus, the "Guac is extra but so is Miley burrito" was born.
